David Mimoun first worked with Jean-François Decroix in Saint-Laurent-des-Combes, a producer of exceptional cognacs and a pioneer of organic farming, alcohols made without additives, sugar, caramel or other colourings.

Established for several years in the south of the Charente, in 2018 he launched "Vivant", his own range of 100% organic French alcohols. This includes two French Single Malt whiskies, Ange and Silène, and Gino, an amber rum extracted by hand from organic sugar cane in Peru.
