The Ayala Champagne House was born in 1860 in Äy in the Marne from the meeting between Edmond de Ayala and Gabrielle Albrecht.

Ayala is a bit like the haute couture of Champagne. The production is modest and the wines are low in sugar in order to offer natural champagnes. It was also the first House to produce a low-dosage Champagne in 1865 at the request of the Prince of Wales and today offers all its cuvées in dosed and non-dosed versions, with theBrut Nature, the Rosé Nature or the Perle d'Ayala Nature.

Ayala has belonged to the Bollinger Champagne House since 2005.
