COS is the acronym of the three founding members of the Azienda Agricola COS in 1980, Giambattista Cilia, Giusto Occhipinti and Cirino Strano, three architecture and medicine students with a passion for vines and wine.
The estate is one of the southernmost in Italy, in the extreme south-east of Sicily and extends over a few dozen hectares of vineyards, olive trees, almond trees and carob trees. In the early 2000s, the estate began vinifying in amphorae in these lands with African influences and an almost arid southern climate, which today produces the beautiful Pithos macerated wines.
Azienda Agricola COS is also at the origin of the revival of Cerasuolo di Vittoria wines, made from a blend of the Frappato and Nero d'Avola grape varieties and the eponymous DOCG appellation recognized in 2005, the only one in Sicily to date.
The cultivation and vinification are organic and natural and the wines are certified organic.
