This Chablis 1er Cru Vau de Vey 2023 from Domaine Alain Mathias is from a plot of old vines located in Beine, currently in conversion to organic farming. Very steep, it requires most of the work, including the harvest, to be carried out by hand. This cuvée benefits from an original ageing of ten months in stoneware jars for 30% and in oak barrels for 70%.

A beautiful Chablis with floral notes (honeysuckle), citrus and almond, with a frank and mineral attack on the palate, followed by ample substance and a long and rich finish. It is the perfect accompaniment to oysters, seafood, pan-fried prawns, or snails.

This Chablis Grand Cru Valmur 2023 from Domaine Christian Moreau comes from a climate located in a small valley between two other grands crus, Les Clos and Vaudesir, on a terroir with a strong clay dominance.

It offers a beautiful light gold colour. Benefiting from a cooler exposure than its big brother "Les Clos" and like it clay soils, it opens with a rich and powerful fruity nose with citrus aromas and subtle woody notes, and a lot of amplitude on the palate, even exuberance, with a delicate finish. It can be enjoyed with scallops, lobster, fine fish, white meats in sauce or cheeses (Comté, goat's cheese). It is a wine that can be kept for a long time until about 2040.

Located, like all the Grands Crus of Chablis, on the right bank of the Serein, the plots are located on two exposures, one in the north-west (30 ares) and one in the south-east (70 ares), planted with old vines aged 60 years, for an area of 1 hectare in total.
