Domaine Jean Macle Chateau-Chalon Jura 2005

This Château-Chalon 2005 from Domaine Jean Macle is a great "vin jaune" produced by one of the best representatives of the appellation. Vin jaune, the French for 'yellow wine', is similar to dry fino Sherry and gets its character from being matured in a barrel under a film of yeast, known as the "voile", on the wine's surface.

With a beautiful straw colour with golden reflections, it offers rich aromas of walnuts and almonds, curry, ginger and celery on the nose with some floral and tangy notes. On the palate, it is ample and smooth, taut, perfectly balanced, with a very long finish. With 20 years of ageing, it is perfectly ripe, a term that for Château-Chalon wines often refers to a period of several decades.

The only wine of controlled appellation in France that cannot be produced every year, it is thus missing one vintage in five in the 20th century. It is bottled after tasting, after 7 years in barrels. It is a gastronomic wine, to be enjoyed with foie gras, lobster, scallops, fish in sauce or with spicy cuisine, white meats in cream and mushroom sauce and cheeses (Comté, Parmesan, old Cheddar). It's best to open it several hours in advance.
