Distillerie Twelve, Whisky français d'exception produit en Aubrac

The Twelve distillery produces a range of exceptional French whiskies in Laguiole, a small town in Aubrac in the north of Aveyron at an altitude of 1000 metres. The brewery and the still are installed in the old presbytery of the village, the Presbytère des Anges, erected more than 300 years ago on the hillside from the stones of the defensive fort of Laguiole, and the ageing cellar in the former convent of Laguiole, built of granite and basalt.

The story of Twelve dates back to New Year's Eve 2013 when Christian and Patrice were hiking in the Aubrac. Inspired by the wild landscapes similar to those of Scotland and by the meeting a few days later with a young wine merchant from Normandy, they took the gamble of creating a whisky distillery. A group of 12 friends formed and decided in May 2014 to embark on the project of creating an exceptional whisky: the distillery would be called Twelve, like the number of friends and the number of the Aubrac department.

The Aubrac plateau is characterized by the particular richness of its flora, the harshness of its climate, the quality of its water extracted from the many small rivers, the boraldes, which run through the plateau before joining the Lot valley, and the rare presence of peat bogs. Twelve uses local ingredients from this exceptional terroir. The brewery produces beer made from malted barley, partly local, crushed and mixed with pure water from the Aubrac plateau, then fermented. This beer is then distilled in a custom-made double-distilled Stupfler still to ensure a high-quality whisky. For 600 liters of distilled beer, the still yields only 50 to 60 liters of distillate.

Finally, there is the ageing of at least three years in oak barrels, some new and others having previously contained wine, Port, Pedro Ximenez, Italian Vermouth or rum, more than thirty different types of barrels in total. The new barrels provide structure and the finely woody aromatic profile, the Port barrels give the roundness and the red wine barrels give the whisky very fine tannins.
