The Caesar grape variety is an ancient red grape variety that is on the verge of extinction, found exclusively in the north of Burgundy, in the Yonne department.
It is best known today for being used in the blending of wines from Irancy, Chitry, Epineuil, Côtes d'Auxerre or Coteaux Bourguignons.
It is a capricious grape variety and its grapes require special attention, yields must be low, and the vinification is not very interventionist to preserve its original, somewhat austere character. It offers very good preservationability.
A few wine estates are reviving it, such as the Domaine de Flavigny-Alésia in Flavigny-sur-Ozerain near the Alésia site.
