Domaine Jean Macle Chateau-Chalon Jura 1987
This Château-Chalon 1987 from Domaine Jean Macle is a great "vin jaune" produced by one of the best representatives of the appellation. Vin jaune, the French for 'yellow wine', is similar to dry fino Sherry and gets its character from being matured in a barrel under a film of yeast, known as the "voile", on the wine's surface.
The only wine of controlled appellation in France that cannot be produced every year, it is thus missing one vintage in five in the 20th century. It is bottled after tasting, after 7 years in barrels.
It is a gastronomic wine, with rich aromas of nuts, mushrooms, spices (curry, turmeric, ginger) and candied fruit, ample and smooth in the mouth, with a very long finish. With 40 years of ageing, it is perfectly mature, a term that for wines of Château-Chalon often refers to a period of several decades, to be enjoyed with foie gras, lobster, scallops, fish in sauce or with spicy cuisine, white meats in cream and mushroom sauce and cheeses (Comté, Parmesan, old Cheddar). It is best to open it several hours in advance.
