The 2020 Pais Salvajo cuvée is a Chilean red wine from the Valle de Maule of Domaine J. Bouchon and is made from 100% of the indigenous Pais grape, which comes from the old wild vines scattered in the flora of Mingre, in the dry coastal region of Maule. These vines have developed by climbing trees on hills and ravines without any human intervention and are the purest expression of an organic and sustainable environment. The grapes are harvested manually at the end of April using ladders to fetch the grapes from a height of 4 or 5 metres.

The vines are grown in dry agriculture, irrigated only by rainwater.

The 2018 vintage offers an intense and brilliant ruby colour and on the nose, beautiful aromas of black fruits (blackcurrant) and mineral notes. On the palate, it is a greedy and juicy wine, with supple and elegant tannins, controlled acidity and a long finish.

It can be enjoyed today with red meats, grilled or in sauce, preferably after a long decanting of 2 hours, and can be kept in the cellar until about 2028-2030.
