Chardonnay is the emblematic grape variety of Burgundy white wines and represents more than 95% of the white grape varieties planted. However, it is not the only grape variety to be used since Aligoté and Sauvignon can also be found , the latter only in the Saint-Bris appellation.

This 2023 Chablis from Domaine Alain Mathias is certified organic and comes from a plot of Kimmeridgian marl and Portlandian limestone, dating from the Upper Jurassic, characteristic of the Chablis terroir.

The grapes are harvested with exceptional ripeness. It is aged for 10 months on lees, revealing a complex aromatic palette of floral notes combined with aromas of white fruit. The palate is ample and balanced with a long finish. It is the perfect accompaniment to grilled fish or fish in sauce, poultry and white meats, or snails.

This Bourgogne Tonnerre 2023 from Domaine Alain Mathias is a blend of several plots of vines planted in the commune of Epineuil.

It is vinified and aged in vats for a very pure expression, fine floral and fresh fruit aromas with subtle exotic nuances on the nose, a rich, lively and fresh wine with a fruity and crisp substance in the mouth and a good length.

It will be the perfect accompaniment to white meats in sauce, fish and Asian cuisine. It will be available until approximately 2028.
