Pascal Jolivet Sancerre Sauvage Organic Cultivation Unfiltered Red

Pascal Jolivet Sancerre Sauvage Organic Unfiltered Red 2015

45.90 € Tax included

Pascal Jolivet's 2015 Sancerre Sauvage is the only red cuvée from the Domaine to be aged in barrels. The name "Sauvage" refers to the all-natural fermentation, without the addition of exogenous yeasts. The wine is aged in demi-muids for 15 months and is bottled without filtration.

The grapes come from a parcel selection of old Pinot Noir vines, planted in 1952 on clay-limestone soils rich in minerals, located in the commune of Bué on an area of 1 ha.

This Sauvage 2014 cuvée offers powerful aromas of ripe red fruits with light spicy notes. On the palate, it offers a very nice balance between the concentration of the aromas and the finesse of the tannins, and a persistent finish.

Founded in 1987, Maison Pascal Jolivet is one of the most innovative houses in the Loire Valley and specialises in Sancerre and Pouilly-Fumé wines, with 42 hectares of vines in the Sancerre appellation and 8 hectares in the Pouilly Fumé appellation. Its wines are now recognized and sought after all over the world.
