This Valpolicella Ripasso 2018 is an Italian red wine from Veneto produced by the Novaia estate in organic farming, made from the local grape varieties of the appellation: Corvina and Corvinone, both rich in polyphenols and tannins, and Rondinella.
Ripasso, which means "ironed" in Italian, is a traditional ancestral method that consists of making the wine undergo a second fermentation on the marc of the grapes used to produce Recioto and Amarone della Valpolicella, the most prestigious appellation of Veneto wines. This allows the richness and aromatic complexity and tannic structure of the wines to be developed while maintaining the alcohol content at around 14%.
It offers an intense ruby colour and on the nose, marked aromas of red and black fruits with spicy notes. On the palate, the substance is ample and sapid, with a well-balanced structure and controlled acidity. It can be kept until about 2028. It will be the perfect accompaniment to grilled or braised red meats and cheeses.
