Novaia Corte Vaona Amarone della Valpolicella DOCG Classico Veneto Italy Red 2016
This 2016 Corte Vaona single-vineyard cuvée is an Italian red wine from Veneto in the Amarone della Valpolicella appellation, produced by the Novaia estate in organic farming, made from the local grape varieties of the appellation: Corvina and Corvinone, both rich in polyphenols and tannins, Rondinella as well as other autochthonous grape varieties in complement.
The production of Amarone della Valpolicella must follow several stages that will enhance its aromatic character and make it a rare and surprising wine for wine lovers. The first step is the appassimento, known in France as passerillage: the grapes are dried on racks for 3 to 4 months to concentrate the sugars and aromas. The second stage is fermentation and for Amarone, you have to know how to wait: once pressed, the fruits ferment slowly at low temperature for one to two months. Finally, the wine is often aged in barrels for 24 months, followed by several months in the bottle. Amarone della Valpolicella is a wine that deserves to be earned, as its elaboration requires precision and patience.
It has a deep garnet red colour and intense aromas of black cherries with characteristic spicy, dark chocolate and tobacco notes on the nose. On the palate, this Amarone expresses itself with opulence and balance, a velvety substance and an intense mineral background typical of this wine. It can be kept until about 2030-2032. It will be the perfect accompaniment to grilled or braised red meats, small game and powerful cheeses.
