SAUVIGNON
Sauvignon is the 2nd most planted white grape variety in the world after Chardonnay, with 110,000 hectares. It is mainly found in France and New Zealand, as well as in Chile, South Africa, the United States, Australia, Moldova.
The range of aromas developed in Sauvignon wines is particularly rich and complex. In warm regions, it offers aromas of white and yellow fruits (peach, pear, melon, passion fruit) while citrus and lime dominate when it comes from more temperate regions. In France, depending on the terroirs and soils, it gives wines with typical aromas of flint, flint in Sancerre, Menetou-Salon and Pouilly-Fumé (where it is also called "white smoked"), fruit aromas (blackcurrant, passion fruit, lychee, orange, grapefruit, guava), floral (iris, elderberry, rose, acacia, linden) and vegetal (boxwood, broom, rhubarb, asparagus).
Some wines from the Sauvignon grape variety: Sancerre, Pouilly-Fumé (France), Marlborough (New Zealand).
